Spicy Peanut Noodles

Noodles tossed in a creamy, spicy peanut sauce with cucumber, spring onions, and sesame seeds. A no-cook sauce, ready in 12 minutes.

Ingredients

  • 200g (7 oz) noodles (soba, rice, or instant)
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon chili sauce or sriracha
  • 2 tablespoons warm water
  • 1/2 cucumber, julienned
  • 3 spring onions, sliced
  • Sesame seeds, for serving

Instructions

  1. 1. Cook noodles according to package directions. Rinse under cold water and drain.
  2. 2. Whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, chili sauce, and warm water until smooth.
  3. 3. Toss cooked noodles with the peanut sauce until evenly coated.
  4. 4. Top with julienned cucumber, spring onions, and sesame seeds. Serve at room temperature or cold.
