Hummus and Veggie Wrap

A no-cook wrap that's satisfying, fresh, and ready in minutes. Hummus, crunchy vegetables, and feta in a whole wheat tortilla.

Ingredients

  • 2 large whole wheat tortillas
  • 4 tablespoons hummus
  • 1/2 cucumber, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 30g feta cheese, crumbled
  • 1 handful baby spinach
  • 1 teaspoon olive oil
  • Pepper and dried herbs to taste

Instructions

  1. 1. Lay tortillas flat on a clean surface.
  2. 2. Spread 2 tablespoons of hummus over each tortilla.
  3. 3. Layer spinach, cucumber, and bell pepper strips across the center.
  4. 4. Scatter crumbled feta on top. Drizzle with olive oil and season with pepper and herbs.
  5. 5. Fold in the sides of the tortilla, then roll it tightly from the bottom up.
  6. 6. Cut in half diagonally and serve.
