10-Minute Cheese Quesadillas

The fastest dinner that doesn't feel like a compromise. Crispy tortillas with melted cheese, customizable with whatever you have in the fridge.

Ingredients

  • 2 large flour tortillas
  • 100g shredded cheese (cheddar, mozzarella, or a blend)
  • Optional: diced jalapeños, black beans, corn, or leftover chicken
  • Sour cream and salsa to serve

Instructions

  1. 1. Heat a large skillet over medium heat.
  2. 2. Place one tortilla in the pan. Sprinkle cheese (and any optional fillings) over one half of the tortilla.
  3. 3. Fold the empty half over the filled half to make a half-moon shape.
  4. 4. Cook for 2–3 minutes until the bottom is golden and crispy. Flip carefully and cook 2 more minutes.
  5. 5. Remove from heat, let cool for 1 minute, then cut into wedges.
  6. 6. Serve with sour cream and salsa.
