Spaghetti Aglio e Olio

An Italian classic made with just garlic, olive oil, chili, and spaghetti — simple, bold, and ready in minutes.

Ingredients

  • 200g spaghetti
  • 3 cloves garlic, thinly sliced
  • 1/4 cup olive oil
  • 1/2 teaspoon red chili flakes
  • Salt and parsley to taste

Instructions

  1. 1. Cook spaghetti in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.
  2. 2. In a skillet, heat olive oil over medium heat and add garlic slices. Sauté until golden, about 1–2 minutes.
  3. 3. Add chili flakes and cook briefly to release flavor.
  4. 4. Add the cooked spaghetti and toss with the garlic oil, adding splashes of pasta water as needed to coat evenly.
  5. 5. Season with salt and garnish with chopped parsley before serving.
