Creamy Garlic Mushroom Pasta

A quick and comforting vegetarian pasta dish made with sautéed mushrooms, garlic, and a silky cream sauce;rich but easy enough for a weeknight.

Ingredients

  • 200g pasta (spaghetti, fettuccine, or penne)
  • 1 cup mushrooms, sliced (cremini or button)
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream or plant-based cream
  • 1 tablespoon olive oil or butter
  • Salt and black pepper, to taste
  • Optional: grated Parmesan or fresh parsley for serving

Instructions

  1. 1. Cook the pasta in salted boiling water according to package directions until al dente. Reserve 1/4 cup of the pasta water before draining.
  2. 2. While pasta cooks, heat olive oil or butter in a large skillet over medium heat. Add sliced mushrooms and sauté for 5–6 minutes until golden and tender.
  3. 3. Add minced garlic and cook for 1 minute, stirring to avoid burning.
  4. 4. Reduce heat to low and pour in the cream. Stir well, scraping up any bits from the pan. Let it simmer gently for 2–3 minutes to thicken slightly.
  5. 5. Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add a splash of the reserved pasta water.
  6. 6. Season with salt and pepper to taste. Serve immediately with grated Parmesan and fresh parsley.
