One-Pot Cajun Sausage and Rice

Smoky, spicy Cajun sausage with peppers, onions, and rice all cooked together in one pot. Bold, hearty, and deeply satisfying.

Ingredients

  • 300g (10 oz) smoked sausage (kielbasa or chorizo), sliced
  • 1 cup long-grain white rice, rinsed
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (400g) diced tomatoes
  • 1.5 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Spring onions, for serving

Instructions

  1. 1. Heat olive oil in a large pot over medium-high heat. Brown the sausage slices for 3–4 minutes until golden. Remove and set aside.
  2. 2. In the same pot, cook onion and peppers for 4 minutes. Add garlic and cook for 1 minute. Add Cajun seasoning and paprika and stir for 30 seconds.
  3. 3. Add rice, diced tomatoes, and chicken broth. Stir and bring to a boil. Return sausage to the pot.
  4. 4. Reduce heat to low, cover tightly, and cook for 18–20 minutes until rice is cooked and liquid is absorbed. Fluff with a fork.
  5. 5. Taste and adjust seasoning. Serve garnished with sliced spring onions.
