One-Pot Beef and Vegetable Soup

A hearty, old-fashioned beef and vegetable soup made in one large pot. Tender beef, root vegetables, and a rich broth — the kind of meal that warms you from the inside.

Ingredients

  • 400g (14 oz) beef stew meat, cut into small cubes
  • 2 potatoes, peeled and diced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (400g) diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. 1. Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper and brown in batches for 3–4 minutes until seared. Remove and set aside.
  2. 2. In the same pot, cook onion for 3 minutes. Add garlic and cook for 1 minute.
  3. 3. Return beef to the pot. Add all remaining ingredients. Bring to a boil.
  4. 4. Reduce heat to low, cover, and simmer for 45–50 minutes until beef and vegetables are completely tender.
  5. 5. Remove the bay leaf. Taste and adjust seasoning. Serve hot with crusty bread.
