Garlic Shrimp with Zucchini Noodles

Juicy garlic butter shrimp over silky zucchini noodles — a light, low-carb dinner that feels indulgent but clocks in under 400 calories.

Ingredients

  • 250g shrimp, peeled and deveined
  • 3 medium zucchinis, spiralized
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Red chili flakes to taste
  • Salt and pepper to taste
  • Fresh parsley to garnish

Instructions

  1. 1. Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper.
  2. 2. Cook shrimp for 1–2 minutes per side until pink and just cooked through. Remove and set aside.
  3. 3. In the same pan, melt butter over medium heat. Add garlic and chili flakes, cook 1 minute.
  4. 4. Add zucchini noodles and toss in the garlic butter for 2–3 minutes until just tender. Do not overcook.
  5. 5. Return shrimp to the pan, squeeze lemon juice over everything, and toss to combine.
  6. 6. Serve immediately topped with fresh parsley.
