Cauliflower Fried Rice

All the satisfaction of fried rice with a fraction of the carbs. Riced cauliflower stir-fried with egg, soy sauce, and vegetables.

Ingredients

  • 1 small head cauliflower, riced (or 400g pre-riced)
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. 1. If using a whole cauliflower, cut into florets and pulse in a food processor until it resembles rice grains.
  2. 2. Heat sesame oil in a large skillet or wok over high heat. Add garlic and stir for 30 seconds.
  3. 3. Add mixed vegetables and stir-fry for 2–3 minutes.
  4. 4. Push everything to the side, pour in beaten eggs, and scramble until just set. Mix into the vegetables.
  5. 5. Add cauliflower rice and stir-fry for 4–5 minutes until heated through and any moisture has evaporated.
  6. 6. Add soy sauce and toss to combine. Garnish with green onions and serve immediately.
