Keto Zucchini Noodles with Pesto and Chicken

Spiralized zucchini noodles tossed in creamy basil pesto with sliced grilled chicken. A fresh, low-carb pasta alternative that's filling and ready in 20 minutes.

Ingredients

  • 2 medium zucchini, spiralized
  • 2 chicken breasts
  • 3 tablespoons basil pesto
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • Grated Parmesan and pine nuts, for serving

Instructions

  1. 1. Season chicken breasts with salt, pepper, and a drizzle of olive oil. Grill or pan-fry over medium-high heat for 6–7 minutes per side until golden and cooked through. Rest for 5 minutes, then slice.
  2. 2. Heat olive oil in a large pan over medium heat. Add garlic and cook for 30 seconds. Add zucchini noodles and toss for 2–3 minutes — just enough to warm through without going soggy.
  3. 3. Remove from heat and toss immediately with pesto. Season with salt and pepper.
  4. 4. Serve topped with sliced chicken, Parmesan, and a scattering of pine nuts.
