Keto Cheesy Cauliflower Soup

A velvety, rich cauliflower soup blended until smooth and loaded with sharp cheddar and crispy bacon. Deeply comforting, low-carb, and ready in 30 minutes.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1.5 cups shredded sharp cheddar
  • 4 rashers bacon, cooked and crumbled
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • Salt, black pepper, and chili flakes, to taste
  • Spring onions, for serving

Instructions

  1. 1. Melt butter in a large pot over medium heat. Cook onion for 4 minutes until soft. Add garlic and cook for 1 minute.
  2. 2. Add cauliflower florets and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes until cauliflower is very tender.
  3. 3. Use an immersion blender (or transfer in batches) to blend the soup until completely smooth.
  4. 4. Stir in heavy cream and bring back to a gentle simmer. Add shredded cheddar and stir until fully melted. Season with salt, pepper, and chili flakes.
  5. 5. Serve topped with crumbled bacon and sliced spring onions.
