Garlic Butter Salmon with Spinach

Pan-seared salmon in a rich garlic butter sauce with wilted spinach. Ketogenic, elegant, and ready in 20 minutes.

Ingredients

  • 2 salmon fillets (150g each)
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • Red chili flakes (optional)

Instructions

  1. 1. Season salmon fillets with salt and pepper on both sides.
  2. 2. Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side up and sear for 4 minutes until golden. Flip and cook 3–4 minutes more. Remove to a plate.
  3. 3. Reduce heat to medium. Add butter and garlic to the pan. Cook for 1 minute, stirring.
  4. 4. Add spinach in batches, turning with tongs until wilted, about 2 minutes.
  5. 5. Season with salt and chili flakes if using.
  6. 6. Serve salmon on a bed of spinach, spooning garlic butter from the pan over the top. Squeeze lemon juice over everything.
