Greek Chicken Bowl with Tzatziki

Mediterranean-seasoned chicken over farro or rice with fresh cucumber, tomato, olives, and a generous dollop of homemade tzatziki.

Ingredients

  • 2 chicken breasts
  • 1 cup cooked rice or farro
  • 1/2 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 8 Kalamata olives
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 tablespoons tzatziki (store-bought or homemade)

Instructions

  1. 1. Pound chicken to even thickness. Rub with olive oil, oregano, garlic powder, salt, and pepper.
  2. 2. Cook in a grill pan or skillet over medium-high heat for 5–6 minutes per side until cooked through. Let rest 5 minutes, then slice.
  3. 3. Arrange rice or farro in bowls. Add sliced chicken, cucumber, tomatoes, and olives.
  4. 4. Add a generous spoonful of tzatziki over the top.
  5. 5. Drizzle with a little extra olive oil and sprinkle with oregano. Serve with warm pita if desired.
