Zucchini Noodles with Pesto

A light, low-carb alternative to pasta tossed in fresh basil pesto for a satisfying, nutrient-packed meal.

Ingredients

  • 2 medium zucchinis, spiralized into noodles
  • 2 tablespoons pesto (store-bought or homemade)
  • 1 tablespoon olive oil
  • Cherry tomatoes, halved (optional)
  • Salt and pepper, to taste

Instructions

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add zucchini noodles and sauté for 2–3 minutes until just tender (do not overcook).
  3. 3. Remove from heat and toss with pesto until evenly coated.
  4. 4. Add cherry tomatoes if desired, season with salt and pepper, and serve immediately.
