Black Bean Taco Bowl

All the flavors of a taco in a bowl — spiced black beans, fresh salsa, brown rice, and avocado. Ready in 20 minutes, no meat needed.

Ingredients

  • 1 can (400g) black beans, drained and rinsed
  • 1 cup cooked brown rice
  • 1/2 avocado, cubed
  • 1/2 cup fresh salsa or pico de gallo
  • 1/4 cup Greek yogurt or sour cream
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Juice of 1 lime

Instructions

  1. 1. Heat olive oil in a small pan over medium heat. Add black beans with cumin and smoked paprika. Stir and cook for 3–4 minutes until warmed and fragrant.
  2. 2. Season with salt, pepper, and a squeeze of lime juice.
  3. 3. Spoon rice into bowls as the base, then layer on the seasoned black beans.
  4. 4. Top with salsa, cubed avocado, and a dollop of Greek yogurt.
  5. 5. Finish with more lime juice and any toppings you like — shredded cabbage, jalapeño, or fresh cilantro.
