Baked Cod with Roasted Vegetables

Flaky white cod baked on a bed of colorful roasted vegetables. A light, complete one-pan meal packed with vitamins and lean protein.

Ingredients

  • 2 cod fillets (about 150g each)
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 200°C (400°F). Line a baking dish with parchment paper.
  2. 2. Toss the vegetables with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread them in an even layer in the baking dish.
  3. 3. Roast the vegetables alone for 10 minutes.
  4. 4. Place cod fillets on top of the vegetables. Drizzle with remaining olive oil and lemon juice. Season lightly.
  5. 5. Return to the oven and bake for another 15–18 minutes, until the cod is opaque and flakes easily with a fork.
  6. 6. Serve directly from the baking dish with crusty bread or rice.
