Turkey Stuffed Bell Peppers

Colourful bell peppers filled with seasoned ground turkey, tomatoes, and black beans, topped with melted cheese. A wholesome gluten-free dinner the whole family will love.

Ingredients

  • 4 large bell peppers (any colour)
  • 400g (14 oz) ground turkey
  • 1 can (400g) diced tomatoes, drained
  • 1 can (400g) black beans, rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar or mozzarella

Instructions

  1. 1. Preheat oven to 190°C (375°F). Cut the tops off the bell peppers and remove seeds. Place cut-side up in a baking dish.
  2. 2. Heat olive oil in a skillet over medium heat. Cook onion for 3 minutes, add garlic for 1 minute. Add turkey and cook, breaking it up, for 6–8 minutes until cooked through.
  3. 3. Stir in tomatoes, black beans, cumin, paprika, salt, and pepper. Cook for 3 minutes.
  4. 4. Spoon the filling generously into each pepper. Top with shredded cheese.
  5. 5. Bake for 25–30 minutes until peppers are tender and cheese is bubbly and golden. Rest for 5 minutes before serving.
