Sheet Pan Chicken and Veggies

Everything goes on one sheet pan — seasoned chicken, potatoes, and colourful vegetables roasted together until golden and delicious. Minimal effort, maximum family satisfaction.

Ingredients

  • 4 chicken drumsticks or thighs
  • 400g (14 oz) baby potatoes, halved
  • 1 red bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

Instructions

  1. 1. Preheat oven to 220°C (425°F). Line a large baking sheet with parchment paper.
  2. 2. Mix olive oil, garlic powder, paprika, Italian seasoning, salt, and pepper in a small bowl.
  3. 3. Toss potatoes with half the seasoned oil and spread on one side of the baking sheet. Add chicken pieces and brush with the remaining oil.
  4. 4. Roast for 20 minutes. Add bell pepper, zucchini, and broccoli to the pan, toss in any remaining oil, and roast for 15–20 more minutes until chicken is golden and cooked through and vegetables are tender.
  5. 5. Serve directly from the pan.
