Tuna Pasta

A pantry-staple dinner that comes together in minutes. Canned tuna, olive oil, capers, and lemon make this simple pasta taste anything but boring.

Ingredients

  • 200g spaghetti or pasta of your choice
  • 1 can (145g) tuna in olive oil, drained
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 tablespoon capers (optional)
  • Juice of half a lemon
  • Salt, pepper, and fresh parsley to taste

Instructions

  1. 1. Cook pasta in salted boiling water according to package directions until al dente. Reserve 1/4 cup pasta water before draining.
  2. 2. Meanwhile, heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds until fragrant.
  3. 3. Add capers if using and cook for 1 minute, then add the drained tuna. Break it up gently with a fork and stir to warm through, about 2 minutes.
  4. 4. Add cooked pasta to the skillet and toss to combine. Add a splash of reserved pasta water if the mixture seems dry.
  5. 5. Squeeze lemon juice over everything, season with salt and pepper, and toss once more.
  6. 6. Serve immediately topped with fresh chopped parsley.
