15-Minute Veggie Stir Fry

A colorful, quick, and healthy vegetable stir fry that you can make with whatever veggies you have on hand. Ready in just 15 minutes and full of fresh flavor.

Ingredients

  • 1 bell pepper, sliced into thin strips
  • 1 zucchini, sliced into half-moons
  • 1 carrot, julienned or thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • Optional: 1 clove garlic, minced
  • Optional toppings: sesame seeds or chopped scallions

Instructions

  1. 1. Prepare all vegetables: slice the bell pepper into thin strips, cut zucchini into half-moons, and julienne or thinly slice the carrot. Grate the ginger and mince garlic if using.
  2. 2. Heat the sesame oil in a wok or large nonstick skillet over medium-high heat until shimmering.
  3. 3. Add the prepared vegetables to the hot pan and stir-fry for about 5–6 minutes, tossing frequently, until the vegetables are slightly tender but still crisp and vibrant.
  4. 4. Add the soy sauce and grated ginger (plus garlic if using). Stir well to coat all the vegetables evenly and cook for another 2–3 minutes until fragrant and lightly glazed.
  5. 5. Taste and adjust seasoning if needed. For a bit of spice, you can add a pinch of chili flakes or a dash of sriracha.
  6. 6. Remove from heat and serve immediately, topped with sesame seeds or chopped scallions. Pairs well with rice, noodles, or quinoa.
