Teriyaki Chicken Bowls

Glazed teriyaki chicken over steamed rice with broccoli and a drizzle of sauce. A simple, balanced 25-minute dinner that everyone looks forward to.

Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon mirin or rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 2 cups cooked rice
  • 2 cups steamed broccoli
  • Sesame seeds and spring onions, for serving

Instructions

  1. 1. Whisk together soy sauce, honey, mirin, sesame oil, and cornstarch in a small bowl. Set aside.
  2. 2. Heat oil in a skillet over medium-high heat. Cook chicken pieces for 5–6 minutes, stirring occasionally, until golden and cooked through.
  3. 3. Pour the teriyaki sauce into the pan and toss with the chicken over medium heat for 2–3 minutes until the sauce thickens into a glaze.
  4. 4. Serve over rice with steamed broccoli. Top with sesame seeds and sliced spring onions.
