Black Bean Quesadillas

Crispy flour tortillas filled with spiced black beans, melted cheddar, and jalapeño. A 15-minute vegetarian dinner that's satisfying and full of flavour.

Ingredients

  • 4 large flour tortillas
  • 1 can (400g) black beans, rinsed and drained
  • 1.5 cups shredded cheddar cheese
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1 jalapeño, thinly sliced (optional)
  • 2 spring onions, sliced
  • Sour cream, guacamole, and salsa, for serving

Instructions

  1. 1. Roughly mash black beans with a fork, leaving some whole. Mix in cumin and paprika.
  2. 2. Spread bean mixture over half of each tortilla. Add cheese, jalapeño slices, and spring onions. Fold tortillas in half.
  3. 3. Heat a dry skillet over medium heat. Cook quesadillas for 2–3 minutes per side until golden and crispy and cheese is melted.
  4. 4. Cut into wedges and serve with sour cream, guacamole, and salsa.
